  1. To prepare your glasses: Put some Tajín (or blend your salt/chili powder) on a little, rimmed plate. Run a wedge of lime around the top of each glass. Dip the top of the glass into the salt mix at a 45-degree angle and roll it from side to side to capture the salt. Include ice to your glass and set it aside.
  2. Fill a mixed drink shaker with ice. Include the mezcal, orange juice, lime juice, orange bitters (if utilizing) and optional sweetener (I generally choose mine without you can constantly contribute to taste after shaking). Safely attach the cover and shake well.
