You’re going to like this gorgeous green salad including fresh oranges, goat cheese, almonds and radishes! An easy lemon dressing ties all of it together. Dish yields 6 side salads.



  • 1/4 cup sliced almonds
  • 5 to 6 ounces child arugula
  • 2 oranges, peeled and sliced into thin rounds
  • 2 ounces goat cheese, fallen apart (about 1/2 cup)
  • 1/4 cup very finely sliced and approximately sliced radishes
  • Pinch of ground cinnamon, to spray on the top

Lemon dressing.

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 1 1/2 teaspoons honey
  • 1/4 teaspoon salt


  1. Initially, toast the almonds: In a little frying pan over medium heat, warm the almonds till they are aromatic and beginning to turn golden on the edges, stirring often (mindful, they’ll burn!), about 5 minutes. Transfer them to a bowl to cool.
  2. Location the arugula on a big serving plate or into a big serving bowl. Set up the oranges, toasted almonds, goat cheese and radishes on top. Spray the leading gently with a pinch or more of cinnamon. Reserve.
  3. In a little bowl, integrate the olive oil, lemon juice, honey and salt. Blend together till mixed. Taste, and include a little bit more honey if it’s unpleasantly tart.
